Strawberry Pudding
Ingredients
2 cups fresh strawberries, sliced
1/2 cup sugar
2 cups milk
1/4 cup cornstarch
1 teaspoon vanilla extract
Fresh mint leaves (for garnish, optional)
Instructions
In a blender, puree the fresh strawberries until smooth.
In a saucepan, combine milk, sugar, and cornstarch. Stir until smooth and no lumps remain.
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens.
Once thickened, remove from heat and stir in the strawberry puree and vanilla extract.
Pour the pudding into serving cups or bowls and chill in the refrigerator for at least 2 hours.
Garnish with fresh mint leaves and sliced strawberries if desired. Serve cold and enjoy!
