Healthy Salad
Ingredients
2 cups mixed greens (spinach, arugula, or lettuce)
1/2 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 cup shredded carrots
1/4 avocado, diced
2 tablespoons feta cheese (optional)
1 tablespoon olive oil
1 tablespoon balsamic vinegar or lemon juice
Salt and pepper, to taste
Instructions
In a large bowl, combine mixed greens, cucumber, cherry tomatoes, and shredded carrots.
Add diced avocado and sprinkle with feta cheese, if using.
In a small bowl, whisk together olive oil, balsamic vinegar or lemon juice, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately and enjoy your healthy salad!
